A cooking school rooted in the earth and led by your favorite chefs.

Our mission is simple.  To inspire.  To welcome guests to experience food as it should be.  Local, seasonal, fresh, healthful, and delicious.  We want to share the bounty of our farm and the passion of our guest teachers with you in order to open your mind, expand your palate, and experience wellness as you nourish your whole body.  During our classes, we invite you to share a true farm to table experience, where you pick produce from our extensive organic vegetable and herb garden, eat meat from our well-raised animals, use olive oil from our groves and explore side by side with your favorite experts.

Our intimate cooking classes and wellness retreats are led by some of the most talented and passionate chefs, culinary experts and wellness leaders today.  They are Michelin starred, James Beard Award holders, MasterChef winning and highly acclaimed, and they travel to Italy to ignite your passion and explore together with you.

A Farm.  A Vision.  A Way of Life.

Our Tuscany retreats are held exclusively at Villa Montecastello, an 11th century castle and former monastery restored to perfection, and offering guests an intimate, understated luxury home base.   The villa is a working organic farm that makes all of the produce they grow and raise with obsessive details to quality. These beautiful ingredients come from the local breed of Cinta Senesi pig, chickens, capons, vegetables, fruit and herbs from the extensive organic garden, olive oil grown and pressed on premise.  At Villa Montecastello, classes take place in the professional chef's kitchen, and guests cook from the 1000 year old restored outdoor oven.  Most meals are enjoyed alfresco under the Tuscan sky, where 360 degree views of the countryside are a dream come true.  A stay a Villa Montecastello, immersed in nature, history and beauty, will change the way you look at life.

Sicily, off the Beaten Path.

Western Sicily is the perfect place to experience true Sicilian life as a local and to immerse yourself in its rich culture.  This less developed side of Sicily has a long history of agriculture and a diversity of cultures from Greeks to Arabs that influences its cuisine and way of life.  Our impeccably curated hands-on retreats explore all the best things about Sicilian life, culture and cuisine.  In Sicily, we partner with local organic wine estate, Di Giovanna, to give guests insider access to the best food and wine, makers and shakers in Sicily, sharing our absolute best discoveries to lead you on the journey of a lifetime.  Andiamo!
